## Bora Bora Inspired Lollipops

Hello again! It’s Meghan here from Nutmeg & Honeybee, and I’m so excited to be back to share another treat with you guys. I immediately fell in love with Gray Malin's new Bora Bora series, and was especially inspired by the sparkling blue waters surrounding the island. I racked my brain for ideas of how to translate this series into a fun dessert, and I decided that lollipops would be the perfect way to do it. I truly think the glass-like quality of the lollipops captured the iridescence of the crystal clear water from the collection, and I couldn’t be happier with the way they turned out. I hope you guys enjoy these sweet lollipops as much as I did! Here’s how to make your own:

**_Ingredients:_**

- 2 cups sugar
- 2/3 cup corn syrup
- candy thermometer
- lollipop mold
- lollipop sticks for mold
- blue food coloring
- scalloped white sprinkles (or any white sprinkles)
- edible gold leaf (optional)

**_Directions:_** 1. Lightly grease your lollipop molds and place your lollipop sticks in the mold. 2. In a small bowl, mix together white sprinkles, dark blue food coloring and a splash of water in order to achieve the coral reef look for the lollipops. 3. Mix together sugar, corn syrup and 1/4 cup water in a medium sized saucepan. Heat the ingredients on medium heat until the sugar dissolves. Increase heat to medium-high and wait until your mixture reaches 310-degrees Fahrenheit on your candy thermometer (hard crack). The mixture will be extremely hot and cools quickly, so you need to work fast! 4. In two small bowls, pour the hot sugar mixture evenly into each bowl. Leave one bowl the plain clear color, and in the second bowl, color the mixture blue. 5. Slowly pour the clear sugar into half of a lollipop mold and pour the blue sugar into the other half of the mold on top of it. Repeat this step for the rest of the lollipop molds. Carefully remove the lollipops from the mold, and make sure the sprinkles are on the backside of the lollipops so you can see through them. 8. To finish, add edible gold leaf to the lollipops by gently rubbing the gold with your fingers so it blends into the lollipop. There you have it! These lollipops can be bagged up and saved for later, or if you’re itching to try them, have one or two right away. Enjoy!
